I&J Crispy Battered Hoki with Mexican Charred Corn

This fresh and colourful dish is the perfect accompaniment to your summer menu.

METHOD

  1. Char frozen Edgell Corn Kernels with seasoning in oil on a BBQ plate or frypan.

  2. Combine with tomatoes, onion, cucumber and rocket.

  3. Cook frozen I&J Battered Hoki following packet directions. Serve with corn salsa.

INGREDIENTS

SERVES: 10

  • 500g frozen Edgell Corn Kernels

  • 10g Mexican Seasoning or chilli powder, to taste

  • 300g halved cherry tomatoes

  • 300g diced red onion

  • 200g diced cucumber

  • 120g rocket leaves

  • 10 x 140g frozen I&J Battered Hoki Fillets
