New I&J Lightly Dusted range evokes made from scratch preparation while delivering on quality and flavour

I&J's new Lightly Dusted range, featuring Salt & Pepper Squid, Pollock and Tail On Prawns, evokes made from scratch preparation with a light crispy coating.

I&J has added to its broad range of quality value added seafood with three new products, each of which carry a new style of light crispy coating.

I&J Head of Culinary APAC David White

Lightly Dusted Salt & Pepper Squid, Lightly Dusted Salt & Pepper Pollock and Lightly Dusted Salt & Pepper Tail On Prawns all feature the trusted quality chefs have come to expect from I&J, along with the new flour dusting formulation, which I&J Head of Culinary APAC David White says has been designed to evoke a ‘made in house from scratch’ style of preparation.

“Chefs have been using a light dusting of seasoned flour on their seafood forever – it’s a simple way of ensuring protection during cooking, so that the finished presentation and flavour is everything the customer expects,” David says.

Coating performs two tasks

“In many commercial kitchen operations, seafood is cooked at very high temperatures and our new flour dusting has been developed to provide some light protection against that initial exposure. At the same time we’ve added some subtle seasoning, so it’s performing two tasks – enhancing flavour as well adding a light crisp crunch to ensure great presentation when plated.

“If I was to prepare it myself as a chef, it wouldn’t look any better so it really is as good as from scratch”

“We’ve designed it so it looks as though you’ve given the seafood a light dusting of flour with salt and cracked pepper – you can see the pepper particulates on the outside, as though it’s been freshly prepared back of house, which enhances the value perception for your customers. In fact if I was to prepare it myself as a chef, it wouldn’t look any better so it really is as good as from scratch.”

Highly versatile range

In keeping with I&J’s sustainability commitment, all products have been sustainably sourced, with Lightly Dusted Salt & Pepper Pollock MSC certified, while Lightly Dusted Salt & Pepper Tail on Prawns are ASC certified.

David adds all three products can be deep fried, while the Lightly Dusted Salt & Pepper Pollock is also suitable for pan frying. “The Pollock is white, mild and flaky which is just what customers are looking for in seafood. Because it’s a whole natural fish fillet, it’s the perfect shape for adding into seafood tacos or subs, and we’ve also created a Po’ Boy recipe using it, as that’s fast becoming a very popular choice on menus.”

The range is also highly versatile – both the Lightly Dusted Salt & Pepper Tail On Prawns and Lightly Dusted Salt & Pepper Squid are ideal for finger foods and bar snacks, and all three products make a great choice for seafood baskets or platters.

“The Squid is hand-cut and features a classic pineapple cut making it tender and mild in flavour,” David says, “while the Prawns are tail-on Vannamei prawns which are highly regarded for their taste and appearance.”

All three new products have been packaged in 3kg cartons – both the Squid & Prawns are available in 3 x 1kg formats, given that freezer space is often tight for many foodservice operators.

I&J Seafood University now online

Concurrently with the launch of the range, I&J’s Seafood University Program is now available online as part of the University Hub on the Simplot Foodservice website. This practical resource features a series of modules focusing on seafood best practice for foodservice operators – from storage and handling to effective preparation, practical menu applications, serving solutions and more.

“It’s designed as a 101 of value-added seafood best practice, covering everything you need to know about seafood from a back of house perspective,” David explains. “We cover common questions and concerns, troubleshooting, getting the most out of your deep fryer, time saving practices, profit and yield, all broken down into easily digestible modules that you can work through at your leisure.”
