Sweet meets heat in Oli & Vine’s new Mango Habanero Sauce

Mango Habanero Sauce is one of the latest additions to the Oli & Vine range from Goodman Fielder Food Service. Made by chefs for chefs, each premium fresh chilled product in the range utilises the highest quality ingredients to deliver not only exceptional taste but reliability and consistency you can count on.

Developed as a standout, high impact sauce to suit multiple applications, Mango Habanero Sauce features a sweet upfront taste followed by a building, lingering heat. “As a chef, I think of this as a hot sauce, with an element of fruit to bring sweetness to it,” says Goodman Fielder Executive Chef Brinsley Pereira, who has been showcasing the new product to the market at the recent Fine Food Australia show in Melbourne.

“The flavour profile incorporates the tropical notes of fresh mango and there are also some orange notes, which complements the fiery habanero chilli extremely well. We’ve designed it as any chef’s go-to hot sauce when you want that extra element of tropical sweetness shining through. It has a good kick to it  – when you taste it on its own you’ll see it’s not for the faint-hearted, and it pairs extremely well with protein.

Balance between sweetness and heat

“When we launched about a month ago at Fine Food Melbourne, we had customers tasting it and taking samples, and they kept coming back because they were really interested in understanding how we managed to get the balance between the sweetness and  heat. I think the key for us has been the addition of orange – that together with the mango really complements the heat of the habanero.

“From a cuisine perspective, it’s extremely versatile – you can toss your battered or breadcrumbed food in it after frying and it will coat really well because it has a clingy consistency. Or you can use it in burgers and tacos and the distinctive flavour will really elevate your food.”

Mango Habanero Sauce is able to perform at temperatures of 200°C and above, which makes it ideal for glazing meats like duck, chicken, pork ribs and more. “Any protein with fat content will complement it perfectly because the fat renders as you cook while the sugar in the sauce interacts with it to ensure a beautiful finish,” Brinsley says.

“If, for example, you slow cook a beef brisket overnight for 14 to 15 hours, then give it a brush with Mango Habanero Sauce and put it back in the oven at 210°C, you’ll see the sauce bubble and caramelise as it forms a lovely glaze.”

Fruity scent permeates your food as you cook

Mango Habanero Sauce also makes a terrific marinade – Brinsley suggests tossing prawns in a mix of chopped parsley and Mango Habanero Sauce before placing on the hot grill, then serving on a bed of lettuce or adding to your seafood platter.

He adds it works equally well with vegetables: “If you’re grilling eggplants, you can throw over some Mango Habanero Sauce and again it will impart a beautiful glaze. It also has a fruity mango and orange scent which permeates your food as you cook.”

Ready to use straight from the pack

Made in Australia with authentic habanero chilli paste and 30 per cent Australian grown mango puree, Oli & Vine Mango Habanero Sauce comes fresh chilled and is free from artificial colours, flavours and preservatives. It’s also gluten free, dairy free and suitable for vegetarians.

“It has nine months’ unopened shelf life and comes ready to use straight from the pack, enabling you to avoid the issues around variability that come with from-scratch preparation,” Brinsley points out. “Mango is not in season all year round, but with this sauce in your fridge you can add authentic mango flavour with an added touch of heat to your recipes whenever you want.

“As a dipping sauce, it’s fantastic to serve with a mezze platter alongside your sour cream and other dipping options. Especially now we’re heading into spring, many customers will appreciate its tropical flavour notes and the bright orange colour which jumps out from the plate. Mango Habanero Sauce is equally suitable for a crudite plate because it’s the ideal dipping sauce for carrots and similar crispy vegetables.”

Ideal for beverage use too

Mango Habanero Sauce’s versatility is such that it can even be used in beverages: “As it’s a sugar and vinegar based sauce, you can use it to create cocktails like Spicy Mango Margarita and mocktails – we’ve even created a slushy recipe by blending it with ice and soda water. When chilled, the sweetness of the mango really kicks in while the heat takes a backseat.
